Banana Oatmeal Muffins and Breakfast Surprise !


The kids are going back to school after a extended weekend break and boy are they in for for a surprise when they come down for breakfast !! These healthy oatmeal banana muffins should cheer them up , right ? As one reader politely  remarked that the sight of any muffins can cheer kids up , I would still like to claim that my getting up early and making them as a breakfast surprise should make for some extra cheer ! 


Apart from making the kids happy , it is easy on the mommies too  . What with our frantic morning schedule , we need  mess free wholesome ideas that are time saving as well as being healthy for our kids. These muffins apart from the bake time are not time consuming and yield enough that you can send as part of lunch box too, not to mention saving some for later use . While they are baking, go take care of the million things we have to do to send the kids off to school and by the time the kids are seated at the breakfast table, you can serve them fresh out of then oven.


Ingredients-
1 1/4 cup oats
1 1/4 cup all purpose flour
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 tsp vanilla extract
2 large ripe bananas

Method -

Pre Heat the oven to 400 degrees F and place the muffin cups in your muffin pan cavities.
Take a bowl and  sieve the flour, oats, baking powder and baking soda.
Add the sugar to it , give a gentle whisk and keep aside.
In another bowl,  beat the egg and to the same bowl add the milk, oil and vanilla extract.
Stir it all together and then add the mashed bananas. Make sure it is also incorporated.
Finally , the flour mixture is added by gently folding. Try not to overmix.

Pour the batter equally in the muffin pan cavities and bake for 20  minutes.
Cool on a wire rack and enjoy !
