The Roys love banana bread. We really do . Love it so much that even my kids can boast of baking it on their own .  The fact that their version is loaded with chocolate chips is altogether a different story. Mama Roy tries  to stick to the healthier version though and today was no exception . The box of blueberries sitting in the refrigerator had been giving me pleading looks for the last few days . I could have listened to it earlier but in my defense can only say that  I wanted to give full justice to it . In short , I wanted a recipe which could subdue it's tartness for our taste preference but would still be a healthy appealing bake.   The winter storm may have spared us but it still is very cold here in the Carolinas. These spinach egg muffins along with a cup of tea make cold winter mornings perfect ! The kids are going back to school after a extended weekend break and boy are they in for for a surprise when they come down for breakfast !! These healthy oatmeal banana muffins should cheer them up , right ? As one reader politely  remarked that the sight of any muffins can cheer kids up , I would still like to claim that my getting up early and making them as a breakfast surprise should make for some extra cheer !  Apart from making the kids happy , it is easy on the mommies too  .
